Stan's Holiday Apple Dessert
Choose 3 varieties of organic sweet and/or tart apples 1 small lemon, organic, juiced Small piece of lemon rind, chopped fine ½ cup raisins Small amount of honey to taste 1 tsp. cinnamon 1 tsp. pumpkin pie spice ¼ cup of water 3 tablespoons of ground almond, optional
Place juice of one lemon and small piece of finely chopped rind, and water in pan. Peel and core apples and slice in small pieces. Mix apples, juice, rind, and water in pan as you stir and cook at medium to high heat. When mixture starts to bubble, lower heat. Add honey, cinnamon, pumpkin pie spice and raisins as you stir mixture. Continue cooking at low heat (approx. 15 to 20 minutes) until mixture is soft enough to mash with potato masher. Cover mixture and let cool on stove tope. Serve warm with yogurt, frozen yogurt, ice cream and your favorite cake.
Holiday Raw Fruit Pie - Favorite of Ann Wigmore
Filling:
10-12 tart organic apples, cored 1 cup raisins or currants 1 tablespoon cinnamon Juice of 1 medium lemon
Crust:
1 pound of soft dates, pitted ½ pound walnuts, ground to flour consistency ¾ cup coconut, shredded
Grate ½ of the apples, blend the other half. Mix in raisins, cinnamon and lemon juice. Knead together dates, walnuts and coconut. Press into a 10-inch pie plate and pour in filling.
Sunflower-Almond - Sesame Tahini Logs
1 cup sunflower seed meal, ground fresh ¼ cup tahini ¼ cup raw unprocessed local honey ¼ cup almonds, ground into fine powder 1 cup dates or raisins, chopped ½ cup unsweetened ground coconut, optional
Combine ingredients in order given. Mix all together thoroughly. Separate mixture into two portions; roll into logs. Wrap each mixture in wax paper and store in refrigerator. When chilled, remove and cut into ½ inch pieces. Press a whole almond on each piece for eye appeal.
Raw Carob Fudge
1 cup roasted carob powder ½ cup local uncooked raw honey ½ cup coconut oil ½ cup nuts, coarse ground ½ teaspoon vanilla Pinch of salt
Cream coconut oil, honey, vanilla, salt until smooth. Add remainder of ingredients. Press into shallow pan. Chill to harden and cut into squares.
Biscotti
1 ¼ cups sugar (Use sucanat, it is healthier) 2 ½ cups whole wheat or spelt flour 1/8 teaspoon salt 1 teaspoon baking powder 3 eggs, beaten 2 egg yolks, beaten 1 teaspoon vanilla small amount of lemon zest 1¾ cups of chopped nuts (Choose walnuts, almonds, or filberts…) 1 cup of dried fruit (Choose cranberries, raisins etc.)
Combine dry and wet ingredients. Use wet hands and knead until ingredients are completely combined.
Form a loaf 3 inches by 9 inches. Place on a cookie sheet and bake 25 minutes at 275 degrees.
Remove from oven and cool 10 minutes. Cut 1-inch width cookies. Make about 12 cookies. Return cut cookies to oven and bake 10 minutes on each side at 275 degrees. Remove and cool before serving. Delicious!
