Glycine is a pleasant tasting amino acid with remarkable health benefits. But in order to remain in an activated state, methionine must combine with adenosine to form adenosyl-methionine. This requirement limits methyl transfer reactions to the requirements of the cells, preventing chaos.. One common problem is deficiency of methyl groups to keep methionine in its activated state, SAM.
When Methionine transfers its methyl group, it becomes Homocysteine, a highly reactive substance that can interfere with body chemistry and cause damage to tissues, including the lining of blood vessels, thus increasing risk of blood clots. A mere doubling of blood Homocysteine over the population average has been found to cause a four-fold increase in risk of heart attack.
Nature has arranged to recycle Homocysteine back into Methionine by providing replacement methyl groups, a mechanism that requires two vitamins, B12 and Folic Acid; however these vitamins are often deficient. Luckily, TMG can do the job without requiring any vitamin co-factor. It is just a matter of getting enough TMG. Over 1000 mg (up to 6000 mg in some cases) will lower Homocysteine levels, even after treatment with Folic Acid and B12 are at impasse.
TMG is particularly important to protect the liver from large quantities of Methionine that arrive after eating high protein meals, especially meat, fish, fowl, eggs and cheese. Unlike B12 and Folic Acid, which are vulnerable to intestinal malabsorption, TMG is reliably absorbed. Thus TMG is a strategic nutrient, providing a back-up source of methyl groups to assure recycling of Methionine into SAM and preventing pile-up of Homocysteine, which causes inflammation and damage.
Thus TMG promotes SAM, which is important for such functions as:
1. Production of Carnitine, without which fats cannot be used for energy. 2. Production of Creatine, which is required for sustained muscle energy. 3. Production of Polyamines for cell regeneration and tissue healing. 4. Methylation of Histamine to down-regulate stomach acid. 5. Synthesis and repair of Myelin Sheaths in the brain and nerves. 6. Production of Neurotransmitters, Acetylcholine and Epinephrine, which control arousal, mood, emotions, and learning. 7. Synthesis of the sleep hormone, Melatonin.
NAC, Acetyl Cysteine, replenishes the most important cellular antioxidant, Glutathione, which is protective throughout the various tissues of the body, especially the high stress areas, such as lung, liver, intestine and muscles.. NAC has proved invaluable in major lung conditions, such as asthma and bronchitis, where it has been a best-kept nutrition secret of hospital medicine for many years. It has also proved to be amazingly protective against liver injury from chemical solvents and excess alcohol. Glutathione is required mostly for protection against the free radical damage of everyday living, the little insults to our cell membranes that gradually add up to the wear and tear that can age us beyond our years. That is why it is important to maintain a regular intake of NAC in order to assure a reliable source of the Glutathione that we need every moment of our lives.
Coenzyme Q 10 is also an antioxidant, but its greater function is in assuring the orderly passage of electrons that generate the energy of life inside every cell in the body, the life force itself! These electrons come from hydrogen atoms found in food fats and carbohydrates, and made available by reactions with vitamins, minerals and enzymes within our cells. The electrons are contained within the carbon hydrogen skeletons of fats and carbohydrates until they reach the power plants of the cell, the mitochondria. Here the negatively charged electrons pass through four enzyme complexes within the mitochondria, thereby generating an electronegative current, the life energy.
At the same time the hydrogen residue, having lost a negative charged electron, is now called a proton, signifying its positive charge. Colostrum contains antibodies and other components that act against E-Coli 0157:H7 and 0111:NM, Salmonella, Rotavirus, Coronavirus, and is effective against most other bacteria and viruses.
Lactoferrin is an iron binding protein: makes iron unavailable for needed bacteria reproduction; interferes in the growth of potentially harmful bacteria in the intestine; diminishes the damaging effects of free radicals; exerts its effect at the level of virus absorption or penetration (or both). Contains properties that fight inflammation.
Proline-Rich Polypeptides (PRP) is a special regulatory protein: calms an overactive immune system; stimulates an under active immune system.
Interferon inhibits viral activity. A glycoprotein produced by cells that act to prevent the replication of a wide range of viruses by inducing resistance.
Interleukin -2, a cytokine, stimulates the growth of cells that constitutes the immune system.
Lysozyme, a protein, that is not digested, but persists in the gastrointestinal tract where it breaks down the cell walls of certain unwanted bacteria, preventing their ability to multiply.
Oligosaccharide,a carbohydrate component, allows proliferation of healthy intestinal bacteria and interferes with the adherence of undesirable microorganisms. Oligosaccharides found in colostrum have been shown to block attachment of a wide variety of bacteria especially S. pheumonococci, to mucous membranes, therefore, aiding in the prevention of respiratory inflammations.
Transforming Growth Factor (TGF) is responsible for normal cell growth and repair. TGF are polypeptides that promote cell proliferation, tissue repair and maintenance (i.e. wound healing). Dr. F. J. Ballard found that bovine colostrum contains up to 100 times the mitogenic potency of human colostrum.
Insulin-like Growth Factor I and II (IGF-1 and IGF - II), pro-insulin hormones, have anabolic effects. Bovine and human growth factors have demonstrated ability to stimulate protein synthesis and inhibit protein degradation. IGF - 1(highest concentrations available in nature are in bovine colostrum) is a peptide, an amino acid chain, and resembles the hormone insulin. Researchers theorize that IGF - 1 in colostrum could encourage muscle cells to repair themselves more quickly after stress from intense exercise. IGF-1 and other factors "seal" the gut from ulceration.

Stan's Holiday Apple Dessert
Choose 3 varieties of organic sweet and/or tart apples 1 small lemon, organic, juiced Small piece of lemon rind, chopped fine ½ cup raisins Small amount of honey to taste 1 tsp. cinnamon 1 tsp. pumpkin pie spice ¼ cup of water 3 tablespoons of ground almond, optional
Place juice of one lemon and small piece of finely chopped rind, and water in pan. Peel and core apples and slice in small pieces. Mix apples, juice, rind, and water in pan as you stir and cook at medium to high heat. When mixture starts to bubble, lower heat. Add honey, cinnamon, pumpkin pie spice and raisins as you stir mixture. Continue cooking at low heat (approx. 15 to 20 minutes) until mixture is soft enough to mash with potato masher. Cover mixture and let cool on stove tope. Serve warm with yogurt, frozen yogurt, ice cream and your favorite cake.
Holiday Raw Fruit Pie - Favorite of Ann Wigmore
Filling:
10-12 tart organic apples, cored 1 cup raisins or currants 1 tablespoon cinnamon Juice of 1 medium lemon
Crust:
1 pound of soft dates, pitted ½ pound walnuts, ground to flour consistency ¾ cup coconut, shredded
Grate ½ of the apples, blend the other half. Mix in raisins, cinnamon and lemon juice. Knead together dates, walnuts and coconut. Press into a 10-inch pie plate and pour in filling.
Sunflower-Almond - Sesame Tahini Logs
1 cup sunflower seed meal, ground fresh ¼ cup tahini ¼ cup raw unprocessed local honey ¼ cup almonds, ground into fine powder 1 cup dates or raisins, chopped ½ cup unsweetened ground coconut, optional
Combine ingredients in order given. Mix all together thoroughly. Separate mixture into two portions; roll into logs. Wrap each mixture in wax paper and store in refrigerator. When chilled, remove and cut into ½ inch pieces. Press a whole almond on each piece for eye appeal.
Raw Carob Fudge
1 cup roasted carob powder ½ cup local uncooked raw honey ½ cup coconut oil ½ cup nuts, coarse ground ½ teaspoon vanilla Pinch of salt
Cream coconut oil, honey, vanilla, salt until smooth. Add remainder of ingredients. Press into shallow pan. Chill to harden and cut into squares.
Biscotti
1 ¼ cups sugar (Use sucanat, it is healthier) 2 ½ cups whole wheat or spelt flour 1/8 teaspoon salt 1 teaspoon baking powder 3 eggs, beaten 2 egg yolks, beaten 1 teaspoon vanilla small amount of lemon zest 1¾ cups of chopped nuts (Choose walnuts, almonds, or filberts…) 1 cup of dried fruit (Choose cranberries, raisins etc.)
Combine dry and wet ingredients. Use wet hands and knead until ingredients are completely combined.
Form a loaf 3 inches by 9 inches. Place on a cookie sheet and bake 25 minutes at 275 degrees.
Remove from oven and cool 10 minutes. Cut 1-inch width cookies. Make about 12 cookies. Return cut cookies to oven and bake 10 minutes on each side at 275 degrees. Remove and cool before serving. Delicious!
